This Tomato Caprese Dip blends together roasted tomatoes, soft burrata cheese, and garden herbs effortlessly for your table.
1. Preheat oven to 350 degrees. Place the tomatoes, garlic, and fresh herbs in a rimmed baking dish, leaving them on the vine if desired. Drizzle the olive oil over the tomatoes, then season with salt and pepper. Gently toss the tomatoes to ensure they are evenly coated in the oil. Roast in the oven for 30-35 minutes, or until the tomatoes begin to lightly burst (roast for an additional 5 minutes if you prefer a jammier tomato!). When finished roasting, remove the tomatoes from the oven and let cool for about 5 minutes.
2. When the tomatoes are cool but still warm to the touch, arrange them on a serving platter along with the burrata or mozzarella cheese. Drizzle the tomato infused olive oil from the baking dish over the tomatoes and cheese, and sprinkle with additional salt and pepper. Enjoy by spreading the tomatoes and cheese on the toast.
