Classic Fettuccine with Meatballs

Looking for an upgrade to your traditional Spaghetti with Meatballs dinner? Try this recipe using DaVinci Fettuccine Pasta combined with the taste of delicious classic Italian herbs and spices. This meal is super easy to make and is perfect for a weeknight dinner.

Ingredients

1 lb DaVinci Fettuccine Pasta
Parmesan cheese, grated for serving
For the Sauce:
1 tablespoon DaVinci Extra Virgin Olive Oil
4 cloves garlic, minced or grated
1 bay leaf
2 teaspoons dried oregano
¼-½ teaspoon red pepper flakes
salt and pepper
2 28-oz cans crushed tomatoes
For the Meatballs:
1 lb ground beef
1 lb ground pork
1 cup bread crumbs, fresh or panko
¼ cup whole milk
1 egg
1 egg yolk
3 cloves garlic, minced or grated
⅓ cup parmesan cheese, grated
¼ cup parsley, finely chopped
2 teaspoons kosher salt
1 teaspoon pepper
2 tablespoons DaVinci Extra Virgin Olive Oil

Directions

1. Start the sauce: In a large dutch oven or pot, heat the olive oil over medium heat. Add the garlic and saute until fragrant and lightly golden, about 3 minutes. Add the crushed tomatoes, then add the bay leaf, oregano, red pepper flakes, and about 1 teaspoon each of salt and pepper. Let the sauce simmer uncovered over medium heat until the meatballs are ready.
2. Make the Meatballs: In a large bowl, soak the breadcrumbs in the milk for a few minutes. Add the egg, egg yolk, garlic, and parmesan to the bowl, and whisk everything to combine. Then add in the meat, parsley, salt and pepper, and gently mix the ingredients together using your hands or a large spoon until fully combined.
3. Next, shape the meatballs into large 2-inch round balls (you can make them as large or small as you want, though!) Heat the olive oil in a large skillet over medium-high heat, and begin to cook the meatballs until they are browned on all sides. You will likely need to work in batches!
4. Once all the meatballs are browned, gently place them in the pot with the sauce. Reduce the heat to medium-low, cover the pot, and simmer the meatballs in the sauce for two hours. Be sure to taste the sauce periodically and adjust the seasoning as needed!
5. When the meatballs are fully cooked through and the sauce is full of flavor, begin preparing the pasta according to package instructions. When cooked, you may toss the pasta with the sauce and meatballs, or simply pile the meatballs on top of the cooked pasta. Serve with fresh grated parmesan cheese and parsley.
