Bone Broth Minestrone Soup

2 tbsp Davinci Pasta Extra Virgin Olive Oil
2 cups Davinci Pasta Bowties
3 sticks of LonoLife Chicken Bone Broth
1.5 cup white onion, diced
1.5 cup carrot, peeled and diced
1.5 cup celery, diced
4 cloves garlic, peeled and minced
3 tbsp tomato paste
1 tbsp dried oregano
1 tsp black pepper
1 tsp salt
1 large handful of spinach
1 bay leaf


1. Warm Davinci Pasta Olive Oil in a large pot on medium heat.
2. Add white onion, carrot, and celery. Stir and cook until veggies are softened, about 7 minutes.
3. Prepare LonoLife Chicken Bone Broth according to package instructions
4. Add in minced garlic, tomato paste, dried oregano, black pepper, and salt to the pot and stir until everything is combined, about 2 min, then add the star of the dish, the cartons of LonoLife Chicken Bone Broth. It should be smelling extra fabulous by this point!
5. Once the soup is at a bubbling simmer, add a handful of spinach, and a bay leaf.
6. Cover the pot and cook for 20 minutes on medium heat, until the vegetables are cooked.
7. Last step is to add the gluten free rotini pasta and cover once more to cook a final 8-10 min, until pasta is tender.
8. Season to taste with salt & pepper, serve warm, and enjoy!
Optional: For additional protein/meat, add some shredded rotisserie chicken to the pot.
