Simple Tortellini Pasta Salad

This recipe is the definition of the saying, "Less is more". Tossed with a light vinaigrette to bring the entire pasta salad together, you just need to try it.

Ingredients

  • 2 boxes DaVinci Multi Color Tortellini
  • 2 cups cherry tomatoes
  • 2 cups arugula
  • 1/3 cup pickled red onions
  • 1/2 cup fresh basil, roughly chopped
  • VINAIGRETTE
  • 1/2 cup olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1/4 tsp dried garlic
  • 1/2 tsp pink salt
  • pinch of black pepper

Directions

1. Place all the vinaigrette ingredients in a mason jar and shake well.
2. Cook the tortellini according to the directions on the package. Rinse with cold water to stop the tortellini from overcooking and drain well.
3. Drizzle with the vinaigrette and mix well to prevent from sticking.
4. Add cherry tomatoes, arugula and chopped basil. Toss together. Serve immediately or refrigerate.
