An easy and delicious cold pasta salad that tastes like an Italian antipasto platter, and tossed with a light zesty dressing to bring the entire dish together.
1. Cook your Davinci’s Multi-Color Tortellini according to package directions. Don’t forget to salt the pasta water!
2. While it’s cooking, slice and dice the rest of the salad mix-ins! Set these aside.
3. To a mason jar, add in all of the dressing ingredients. Cover with a lid and shake until it’s all combined. Taste and adjust seasoning if needed.
4. Once the pasta is done cooking, drain it and add to a large bowl. Add the veggies, toppings and Italian dressing and toss thoroughly to combine. Taste and adjust seasoning if needed. Let cool in the refrigerator or eat immediately! Can be stored in the fridge for up to 4 days. Enjoy!
