Loaded Italian Tortellini Pasta Salad

An easy and delicious cold pasta salad that tastes like an Italian antipasto platter, and tossed with a light zesty dressing to bring the entire dish together.

Pasta Salad
2 - 7 oz. boxes of Davinci Multi-Color Tortellini
8 oz spicy salami
2 cups cherry tomatoes, halved
8 oz. mozzarella balls, quartered
1 small red onion (about ½ cup), diced
½ green bell pepper (about ½ cup), diced
½ cup black olives, diced (more if desired)
¾ cup pepperoncini, sliced
¼ cup fresh parsley
Salt and pepper to taste

Homemade Italian Dressing
1 cup DaVinci extra virgin olive oil
1/3 cup red wine vinegar (can also sub white wine or do half of both)
¼ cup water
2 cloves fresh garlic, minced
½ tbsp salt
½ tbsp sugar
1 tsp dried oregano
1 tsp dried parsley
½ tsp cracked pepper


1. Cook your Davinci’s Multi-Color Tortellini according to package directions. Don’t forget to salt the pasta water!
2. While it’s cooking, slice and dice the rest of the salad mix-ins! Set these aside.
3. To a mason jar, add in all of the dressing ingredients. Cover with a lid and shake until it’s all combined. Taste and adjust seasoning if needed.
4. Once the pasta is done cooking, drain it and add to a large bowl. Add the veggies, toppings and Italian dressing and toss thoroughly to combine. Taste and adjust seasoning if needed. Let cool in the refrigerator or eat immediately! Can be stored in the fridge for up to 4 days. Enjoy!
